The Red Lager
Crispy clean light colored red lager beer. Patience up front during fermentation pays off.
Yield: 6 Gallons Original Gravity: 1.048
IBU: 23 Final Gravity: 1.012
Color:     ABV: 4.79%

Instructions:
Split grains in 2 grain bags and steep @156F for 45 minutes
Drain bags, rinse with hot water, and remove grain bags

Dissolve Pale Malt Extract syrup then add 1 oz Hallertau hops
Bring to boil: total boil time is 30 minutes
Add 1oz Hallertau hops after 5 minutes of boil
Add 1/2 tsp Irish moss after 15 minutes of boil

Add 1 oz Fuggle hops after 23 minutes of boil
pour cooled wort into fermenter; top off with chilled tap water to 5.5 - 6 gallons
Add yeast when wort is appx 75F
Once fermentation begins; cool to 55F
After 5 or 6 days of fermentation, perform a diacetyl rest by warming beer up to room temp for 24-48 hours
transfer beer to secondary fermentation vessel. If not usign a secondary fermenter, cool beer down to 40-50F for 14 days or more

Bottle or keg; allow to condition for at least 1 week and then enjoy
