Instructions:
1. Steep all grains in 2 mesh bags in 2 gal. of water while heating to boiling. When near boiling, remove grains.
2. Add and dissolve malt extract, then return to boil.
3. Add 1.5 oz. Kent Golding hops and begin a 30 minute timed simmering boil. Stir frequently to avoid boiling over.
4. With 20 minutes remaining in the 30 minute boil, add 1/2 oz. Kent Golding hops.
5. At the end of the 30 minute timed boil, add 1 oz. Kent Golding hops and immediately cover and remove kettle from heat.
6. Cool to 70 to 75 degrees F before pouring into sanitized fermenter and adding additional water to make 5 gallons total volume. Cooling with a WORT CHILLER will speed cooling and help protect your beer against bacteria and wild yeasts that can taint or spoil your beer! When temperature of mixture is 75 F or below, add yeast and ferment.
NOTES:
For All-Grain brewing, replace the malt extract with 13 lbs of the 2-row barley malt of your choice. If you can not mash the total grain volume you may mash just the 2-row and steep the balance of the grains, or mash with less 2-row plus the specialty grains and supplement with extract. Mash at 155 degrees F for 1 hour. Extend boil time to 60 minutes. Follow the hop schedule above unless you would like a more bittered beer. If so, add hops at the beginning, after 30 minutes and at the end of the boil.
